Food and my Mothers Day mug lol
I used to love complicated food dishes but now although curry is my favourite dish I prefer now simple but yummy food. I cannot stand for hours on end slaving over a hot stove and neither have I the time or inclination to do so. Today I am cooking stuffed chicken thighs and chilli potatoes with a totally scrumptious salad. The chilli potatoes are so easy to do and its a variation on the Spanish Patatas Bravas (without the chopped tomatoes).
Previously boiled and cooled new potatoes with skins on
One finely cut onion or as I do I just chuck it in my mini blender
Chilli according to taste or chilli flakes or cayenne powder
Some mild sweet paprika if you have it
A few chives to make it look pretty
Chopped garlic
Olive oil
Literally just chop up the potatoes with their skins on add them and all the other ingredients to a frying pan and voila ... stir and wait. Don't keep turning all the time but wait for a while then with a huge spatula turn it, this way they seem to go all caramelised and gooey and I can never resist eating them as they are cooking!
I was so chuffed at receiving this cute Mothers Day pressie today, son number two had pictures of both the dogs imprinted on a mug. Im always called The Hobbit, because I am not very tall and the two dogs are called The Beast and The Rat lol.

I'm all for simple cooking these days, although with plenty of flavour..and those potatoes look good.
