The picture doesnt look very inspiring I must admit, but it was my first attempt and very yummy it was too, although just a little too dry for me. Next time I would make a few alterations, maybe serve it with crispy salad and crusty bread or put a bit of a chilli or tomato sauce on the turkey stuffed with spinach and ricotta instead of the breadcrumbs. But it was so easy and simple to make. Turkey escalopes were stuffed with spinach and ricotta and I have to admit I didnt do it myself they were £2.50 for 4 in Asda Walmart. The Parmesan Roasted Broccoli I did myself though though I didnt use the salt and I chose how much broccoli I thought I needed and, as I didnt have any basil I didnt use any.
4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1 1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)
Directions
Preheat the oven to 425 degrees F.
Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

Im trying to incorporate much more vegetables in my diet and saying that I am still on a diet although it isnt going as well I expected.... but I will keep going with it.
I had my hair cut the other week and now its all really short and much more easy to manage, and my new wardrobe management plan has been working, Im not busy looking for things to wear all the time. My few staples are there ready for me to put on and I know at least they all go together. Ive still got a long way to go with it but at least I am still on my News Years resolutions. Hopefully this weekend Ill try and carry on sorting out the wardrobe ready to Ebay, I just havent felt like doing it recently am still getting over this damn bug thats going around and I am constantly tired. Its hit my Mum really hard and I had to call the Doctor out to see her the other night, shes not eating or drinking or taking her medications and she has become very frail and I have had to be a bit of a bully to her but its for her own good. I am so glad she had both the flu jab and the swine flu jab otherwise goodness knows what would have happened to her, at 82 I dont think she would have done well.! I had to go to my Docs today for my bloods to be done and while I was out I popped into Asda very quickly as its Son no 2 birthday on Tuesday and I needed to get some stuff for him, he said there is nothing he wants so I have made him up a little parcel of goodies, hes always using my hairbrush cos he says its a really good one, so I bought him one of his own lol, then I added some more bits and pieces for him. It doesnt seem much but we are all on an economy drive including him, so the parcel of goodies will be a welcome suprise. Other than that nothing much has been happening. Hubby is actually off this weekend so other than taking the dogs out we are going to do absolutely nothing, just laze around and watch dvds and eat ...... healthily of course though lol. God I sound so boring at the moment I really need to have something interesting to say and of course it would be a change to have done something interesting too hahahaha. ....... one day ........ah well back to fantasyland now. Hmmm what shall I fantasise about today????

I already cook brocolli and cauliflower florets in a similar way...ie tossed in olive oil and garlic and baked in the oven..although I don't add the other stuff at the end...I can't anyway because I can't get parmesan..but it sounds delicious.
