Somethings cooking

Well today still not feeling the lurve so I decided to stay in and cook and clean ... wow how exciting lol.  Have made peri-peri chicken and a sort of vegetable/lentil/chicken pie.  I guess I am getting good value out of my chickens and chicken thighs I bought the other day.  The pie consists of a £1 bag of chopped soup veg from Asda, chicken stock I made from boiling the carcasses out of the two chickens I had already cooked and bought, and I added some brown lentils.  I pureed a large spoonful of the mixture and re added that back to the mixture therefore making the sauce a bit thicker, added garlic and mixed herbs and pepper oh and a dash of cumin powder and of course some chicken.  Lo and behold a chicken sort of pie emerged have just got to put the crust on now but I cant decide whether pastry or potato would be nice.  Mind you it could be a thick soup hahahahahaha if I wanted. Peri peri chicken easy too I deboned and skinned 8 chicken thighs cut them up into small pieces added pre bought Nandos peri peri marinade and left to marinade covered in clingfilm in the fridge.  Its now cooking on the stove and will be served tonight with salad and homemade coleslaw, made from an Asda 50p bag of grated carrot, onion and cabbage with a just a spoonful of mayonnaise added. Yum yum thats all I can say and whoopee to at least thinking in advance what we are going to eat.  I must admit I would have preferred to go and get a couple of new plants for my front room but I just couldnt be bothered, maybe tomorrow will be the day, inspired from watching Green Card the 1990's film I watched last night.  I so love it.  Ive been thinking I could have added tomato and tomato puree to my sort of pie .... hmmmmm.

I love the challenge of making as many meals as possibe from a chicken. We can get these packs of small square sheets of frozen uncooked puff pastry here. I bought some yesterday and am thinking of making some individual pies to freeze. I'll let you know how they turn out.
